This year at Family Camp at Ute Trail we’re obsessed with this make your own quinoa salad bar.
Not only is it healthy and packed with healthy ingredients – it tastes great! The veggies work so well with the quinoa and- add a balsamic or vinaigrette dressing and then the flavors will really pop! Enjoy!
- Iceberg lettuce
- Quinoa
- Diced cooked sweet potatoes
- Corn
- Cucumber
- Red/Yellow and Green peppers
- Black beans
- Hard boiled eggs
- Cherry tomatoes
- Feta cheese
- Grilled Chicken
